Not From a Box Pancakes!
Ingredients:
- 1 1/4 cup all purpose flour
- 1 Tbsp. granulated sugar
- 1 Tbsp. baking powder
- ½ tsp. kosher or coarse salt
- 1 large egg
- 1 tsp. vanilla
- 11/4 cups milk, preferably whole
- 2 Tbsp. vegetable oil
- Maple syrup, butter, jam or jelly for serving
- Sprinkles, fresh fruit, whipped cream of fairy dust to sprinkle for fun on top.

Directions:
Place the dry ingredients into a medium-size bowl and whisk until combined.
Place the wet ingredients into a large bowl and beat until well blended. Add the flour mixture to the egg mixture and stir everything together only until just blended. There will be bumps, don’t freak out! This is normal and it’s totally cool.
Heat a large skillet or over medium heat and add a tiny bit of cooking oil until the bottom of the pan is covered.
add the batter by ¼ cups.
Cook the pancakes until you see bubbles forming on the top and the edges start too look cooked, about 2 minutes. Flip with a spatula and cook for another 1-2 minutes, until golden brown.
Tip: If you want to get extra fancy, once you pour ¼cup of the batter in the pan, top your pancakes with blueberries or chocolate chips.
I’m always juggling burners and the oven to get everything to the table hot.. Cooking stuffing in a slow cooker, is pure genius! That and there is NEVER enough stuffing in the turkey! You can even make this ahead of time, to cut the time of cooking on Thanksgiving Day!
This says "over night" but i've made this and ate it within two hours before. 15 minutes when I'm impatient. My baby LOVES this, and I have to admit, I feel like a fancy, gourmet, baby food chef, when i make it for her.
